The weekends were made for you to enjoy a big breakfast.  I wish there was more time during the week, but if I have to make a choice between extra winks of sleep or making breakfast, sleep will win every time.  So as I work towards the weekend, I am very excited to make something fabulous to nosh on for those special big breakfast mornings.

That’s why I am happy to share my home run recipe for making delicious fried potatoes.

5 red russet potatoes diced
1/2 cup red onion diced
1 tablespoon chives
4 tablespoons of butter
1/4 cup vegetable oil
Salt – season to taste
Pepper – season to taste
2 tablespoons minced garlic
1/4 teaspoon Lawry’s season salt
Rosemary – season to taste

In a large skillet heat vegetable oil until hot and add butter.  Once butter has melted, add your diced potatoes and onion over medium heat.  Cook thoroughly, when potatoes are no longer hard add season salt, minced garlic, chives, and rosemary. Be sure not to over cook the garlic, and continue to turn with seasoning for 3 to 4 minutes. Drain excess oil from potatoes on paper towels.  Lightly season with salt and pepper for the flavor win.
